Ingredients
- 1 lb pork belly
- 1 medium carrot
- 1 medium onion
- 1 medium zucchini
- 3 cloves garlic
- 2 tbsp soy sauce
- 1 tbsp vegetable oil
- ½ tsp salt

Slice the 1 lb pork belly into thin strips. Peel and slice the 1 carrot, 1 onion, and 1 zucchini into similar-sized pieces. Mince the 3 garlic cloves.

Heat the 1 tbsp vegetable oil in a large skillet or wok over high heat. Add the pork belly and cook until browned and crispy, about 5-7 minutes. Remove with a slotted spoon and set aside.

In the same skillet, add the sliced onion and carrot. Stir-fry over medium-high heat until slightly softened, about 3-4 minutes.

Add the zucchini and minced garlic. Stir-fry for another 2-3 minutes until the zucchini is tender-crisp.

Return the pork to the skillet. Add the 2 tbsp soy sauce and 0.5 tsp salt. Toss everything together and cook for 1-2 minutes until well coated and heated through. Serve hot.
