Ingredients

  • 3 cups all-purpose flour
  • 1 cup warm water
  • 2 tablespoons olive oil
  • 1.5 teaspoons salt
  • 1 teaspoon instant yeast
  • 1 pound ground pork
  • 1 cup ricotta cheese
  • 1.5 cups mozzarella cheese, shredded
  • ½ cup parmesan cheese, grated
  • 2 cups fresh spinach, chopped
  • 3 cloves garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 to taste salt and black pepper
  • 1 tablespoon olive oil for cooking
  • 2 tablespoons cornmeal
  • 1 batch egg wash (1 egg + 1 tbsp water)

Instructions

    Combine warm water, yeast, and a pinch of sugar in a small bowl. Let sit for 5 minutes until foamy.

    Mix flour and salt in a large bowl. Create a well in the center and add yeast mixture and olive oil.

    Stir until a shaggy dough forms, then knead for 8-10 minutes until smooth and elastic.

    Place in a greased bowl, cover with a damp towel, and let rise for 20-25 minutes until doubled.

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat.

    Add minced garlic and cook for 30 seconds until fragrant.

    Add ground pork and brown, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if needed.

    Add chopped spinach and cook until wilted, about 2 minutes. Season with oregano, salt, and pepper. Cool slightly.

    In a bowl, combine ricotta, mozzarella, parmesan, and cooled pork mixture. Mix until well combined.

    Preheat oven to 400°F. Divide dough into 4 equal portions and roll each into a 7-inch circle.

    Spoon filling onto one half of each circle, leaving a 0.5-inch border. Fold dough in half over filling.

    Seal edges by pressing with a fork. Transfer to a cornmeal-dusted baking sheet.

    Brush with egg wash and cut small slits in the top for steam to escape.
