Ingredients
- 1 lb biała kiełbasa (Polish white sausage)
- 1 medium yellow onion, sliced
- 2 rolls crusty bread rolls or kaiser rolls
- 2 tbsp whole-grain mustard
- 2 tbsp fresh horseradish sauce (jarred)
- 2 tbsp fresh dill, roughly chopped
- ½ tsp caraway seeds

Heat oil in a large skillet over medium-high until shimmering, about 90 seconds.

Add sliced onions to the skillet, stir, and cook until golden and soft, about 8 minutes. Transfer to a plate.

Score the sausage skin lightly in a crosshatch pattern. Add to the hot skillet and sear 3–4 minutes per side until golden and cooked through.

Slice each roll horizontally and toast the insides in the skillet for 60 seconds until light golden.

Spread mustard and horseradish on the toasted bread. Layer in the sausage, caramelized onions, and a pinch of caraway.
