Ingredients
- 2 lbs lutefisk, prepared and drained
- 4 cups whole milk
- 4 tbsp butter
- 1 medium yellow onion, halved
- 1 whole bay leaf
- 6 whole black peppercorns
- 1 cup frozen peas
- 2 tbsp Swedish or Dijon mustard
- 2 tbsp fresh dill or parsley, chopped

Pour milk into a large pot. Add onion halves, bay leaf, and peppercorns.

Heat milk mixture over medium until small bubbles form at the edges, ~8 minutes.

Gently slide lutefisk into the simmering milk. Poach uncovered until opaque and tender, ~10 minutes.

Using a slotted spoon, transfer fish to a warm serving platter. Tent loosely with foil.

Strain cooking liquid through a fine sieve into a small saucepan. Discard solids.

Return strained liquid to heat. Stir in butter and frozen peas. Simmer until peas are tender, ~4 minutes.

Remove from heat. Stir in mustard and half the fresh dill. Taste and season with salt and pepper.

Pour sauce and peas over lutefisk. Garnish with remaining dill and serve immediately.
