Ingredients
- ¾ lb salt cod fillets (pre-soaked), skin removed
- ½ lb waxy potatoes (yukon gold or similar)
- ¾ cup heavy cream
- 3 whole garlic cloves, minced
- 1 whole bay leaf
- 2 tbsp fresh parsley, chopped

Slice potatoes into 1/4-inch rounds. Heat 2 tbsp olive oil in a 12-inch skillet over medium-high until shimmering.

Add potatoes and cook without stirring for 3 minutes until edges start to soften and bottom layer browns lightly.

Stir in garlic and cook 30 seconds until fragrant, then add cream and bay leaf.

Nestle cod fillets into the cream sauce. Cover and simmer 6 minutes until fish flakes easily with a fork.
