- 3.5 lb whole chicken
- 2 inch piece ginger
- 4 stalks green onions
- 3 tbsp soy sauce
- 1 tsp sesame oil
- 1 tbsp salt

Fill a large pot with water and add 1 tbsp salt, 1 sliced ginger piece, and 2 chopped green onions. Bring to a boil over high heat.

Carefully lower the 3.5 lb chicken into the pot, breast side down. Add more water if needed to cover the chicken completely.

When the water returns to a boil, reduce heat to low, cover, and simmer gently for 25 minutes. The chicken is done when the juices run clear when pierced at the thigh.

Turn off the heat and let the chicken rest in the hot broth for 10 minutes. This keeps the meat moist and tender.

While the chicken rests, make the dipping sauce: mix 3 tbsp soy sauce, 1 tsp sesame oil, and the remaining 2 chopped green onions in a small bowl.
