Ingredients

  • 3.5 lb whole chicken
  • 2 inch piece ginger
  • 4 stalks green onions
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp salt

Instructions

  1. 1

Fill a large pot with water and add 1 tbsp salt, 1 sliced ginger piece, and 2 chopped green onions. Bring to a boil over high heat.

  2. 2

Carefully lower the 3.5 lb chicken into the pot, breast side down. Add more water if needed to cover the chicken completely.

  3. 3

When the water returns to a boil, reduce heat to low, cover, and simmer gently for 25 minutes. The chicken is done when the juices run clear when pierced at the thigh.

  4. 4

Turn off the heat and let the chicken rest in the hot broth for 10 minutes. This keeps the meat moist and tender.

  5. 5

While the chicken rests, make the dipping sauce: mix 3 tbsp soy sauce, 1 tsp sesame oil, and the remaining 2 chopped green onions in a small bowl.

  6. 6

Remove the chicken from the pot and let it cool slightly on a cutting board. Chop into bite-sized pieces, then arrange on a serving plate.

  7. 7

Drizzle the dipping sauce over the chicken or serve it on the side. Garnish with extra green onion if desired.
