Ingredients
- 2 large ripe plantains
- ½ cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- 1 cup vegetable oil

Peel the 2 plantains and cut them into 1-inch chunks. Place them in a bowl and mash with a fork until mostly smooth but still slightly chunky.

Add the 0.5 cup flour, 1 teaspoon baking powder, 0.5 teaspoon salt, and 0.5 teaspoon cinnamon to the mashed plantains. Stir until a thick, sticky batter forms.

Heat the 1 cup vegetable oil in a large skillet over medium-high heat until a drop of batter sizzles immediately, about 2 minutes.

Drop spoonfuls of the batter into the hot oil, flattening each slightly with the back of the spoon. Do not crowd the pan; cook in batches if needed.

Fry the fritters until golden brown and crisp on the bottom, about 2-3 minutes. Flip and cook the other side until golden, another 2-3 minutes.
