Pirate Tacos

Ingredients

  • 8 tortillas corn tortillas
  • 1 lb ground beef
  • 1 large onion
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 large avocado
  • 1 whole lime
  • ½ cup sour cream
  • ¼ cup cilantro

Instructions

    Thinly slice the 1 large onion. Heat 1 tbsp oil in a large skillet over medium heat and cook the onion, stirring occasionally, until soft and golden brown, about 10 minutes. Transfer to a bowl.

    In the same skillet, add the 1 lb ground beef. Cook over medium-high heat, breaking it up with a spoon, until browned and no longer pink, about 6-8 minutes. Season with salt and pepper.

    While the beef cooks, make the crema: in a small bowl, mix the 1/2 cup sour cream with the juice of half the lime and a pinch of salt. Set aside.

    Warm the 8 corn tortillas in a dry skillet over medium heat for 30 seconds per side, or until soft and pliable. Keep them covered with a towel.

    Assemble the tacos: fill each tortilla with beef, caramelized onions, and a sprinkle of the 1 cup shredded cheese. Top with sliced avocado, a drizzle of crema, and fresh cilantro leaves. Serve with the remaining lime cut into wedges.

    Optional: add a pinch of chili powder or cumin to the beef while cooking for extra flavor.
