Ingredients

  • 4 slices bread
  • 2 cups fresh basil leaves
  • 1 clove garlic
  • ¼ cup pine nuts
  • ½ cup parmesan cheese
  • ½ cup olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

    Toast the 4 slices of bread until golden and crisp, about 3-4 minutes per side in a toaster or under a broiler.

    In a food processor, combine the 2 cups basil, 1 garlic clove, and 0.25 cup pine nuts. Pulse until coarsely chopped, about 10 pulses.

    Add the 0.5 cup parmesan and pulse again until combined, about 5 pulses.

    With the processor running, slowly drizzle in the 0.5 cup olive oil until the pesto is smooth and emulsified, about 30 seconds.

    Season the pesto with the 0.25 teaspoon salt and 0.25 teaspoon black pepper, then pulse once to mix.

    Spread a generous spoonful of pesto onto each slice of toasted bread. Serve immediately.
