Ingredients
- 1 lb calamari rings
- ½ cup pesto
- 2 tbsp olive oil
- 1 whole lemon
- ¼ cup fresh basil leaves
- ½ tsp salt
- ¼ tsp black pepper

Pat the 1 lb calamari rings dry with paper towels and season with 1/2 tsp salt and 1/4 tsp black pepper.

Heat 2 tbsp olive oil in a large skillet over high heat until shimmering, about 2 minutes.

Add the calamari in a single layer and cook without stirring for 2 minutes, until lightly golden on the bottom.

Stir and cook for 1-2 more minutes, until the calamari is just opaque and tender; do not overcook or it will become rubbery.

Remove the skillet from heat and stir in 1/2 cup pesto until the calamari is evenly coated.

Squeeze the juice of 1 lemon over the top and garnish with 1/4 cup fresh basil leaves before serving.
