Peruvian Stir-fried Noodles with Beef

Ingredients
- 1 lb beef sirloin, thinly sliced
- 8 oz cooked noodles (spaghetti or lo mein)
- 1 medium red onion, sliced
- 2 medium tomatoes, cut into wedges
- 1 medium bell pepper, sliced
- 2 cups frozen french fries
- 3 tbsp soy sauce
- 3 tbsp vegetable oil

Cook the french fries according to package directions until crispy, about 20 minutes in a 425°F oven. Set aside.

Heat 2 tbsp vegetable oil in a large skillet or wok over high heat until shimmering. Add the 1 lb beef in a single layer and sear without stirring for 2 minutes until browned, then stir-fry for 2 more minutes until just cooked through. Remove beef and set aside.

Add the remaining 1 tbsp oil to the skillet. Add the 1 sliced onion and 1 sliced bell pepper; stir-fry over high heat for 3 minutes until slightly charred and crisp-tender.

Add the 2 tomato wedges and stir-fry for 1 minute until they start to soften but still hold their shape.

Return the beef to the skillet. Add the 8 oz cooked noodles and 3 tbsp soy sauce; toss everything together for 2 minutes until the noodles are heated through and coated.

Serve the stir-fry topped with the crispy fries and garnish with chopped chives or sliced red chili if you like.
