Ingredients
- 1 lb beef sirloin, thinly sliced
- 1 medium yellow onion, sliced
- 2 medium tomatoes, cut into wedges
- 2 cups frozen french fries
- 2 cups cooked white rice
- 2 cups cooked noodles (e.g., spaghetti)
- 3 tbsp soy sauce
- 3 tbsp vegetable oil
Instructions
- 1
Cook the 2 cups frozen french fries according to package directions until golden and crispy, about 15 minutes. Set aside.
- 2
Heat 2 tbsp vegetable oil in a large skillet or wok over high heat until shimmering. Add the 1 lb beef slices in a single layer and sear until browned on both sides, about 3 minutes total. Remove beef and set aside.
- 3
In the same skillet, add the remaining 1 tbsp oil and the 1 sliced onion. Stir-fry over high heat until the onion is soft and slightly charred, about 2 minutes.
- 4
Add the 2 tomato wedges and stir-fry for 1 minute, until tomatoes are just softened but still hold their shape.
- 5
Return the beef to the skillet. Add the 3 tbsp soy sauce and toss everything together for 1 minute, until the sauce coats the beef and vegetables.
- 6
Add the 2 cups cooked noodles and the crispy fries. Toss gently for 1-2 minutes, until everything is well combined and heated through.
- 7
Serve the stir-fry over the 2 cups cooked white rice. Garnish with chopped cilantro and red chili slices if desired.
