Ingredients
- 4 fillets catfish fillets
- 1 whole lime
- ½ cup peanut butter
- 2 tbsp sweet soy sauce
- 2 tbsp chili paste
- 1 cup green beans
- 2 cups rice
- ½ cup vegetable oil

Cook the 2 cups rice according to package directions; keep warm.

Blanch the 1 cup green beans in boiling water for 2 minutes until bright green and crisp-tender; drain and set aside.

Rub the 4 catfish fillets with juice from the 1 lime and a pinch of salt; let sit for 5 minutes.

Heat 0.5 cup vegetable oil in a large skillet over medium-high. Fry the catfish in batches until golden and crispy, about 4 minutes per side; drain on paper towels.

In a bowl, mix 0.5 cup peanut butter, 2 tbsp sweet soy sauce, 2 tbsp chili paste, and 3 tbsp hot water until smooth; add more water for a pourable sauce.
