Ingredients
- 4 cups mixed greens
- 1 cup cherry tomatoes
- ½ medium red onion
- ¼ cup peanut butter
- 2 tbsp soy sauce
- 2 tbsp lime juice
- 2 breasts chicken breast
- 1 tbsp sesame seeds

Season the 2 chicken breasts with salt and pepper. Grill over medium-high heat until cooked through and charred in spots, about 6-7 minutes per side. Let rest, then slice.

In a small bowl, whisk together the 1/4 cup peanut butter, 2 tbsp soy sauce, 2 tbsp lime juice, and 3 tbsp warm water until smooth. Add more water if needed to reach a pourable consistency.

In a large bowl, combine the 4 cups mixed greens, 1 cup cherry tomatoes (halved), and 1/2 red onion (thinly sliced).

Pour the peanut dressing over the salad and toss well to coat every leaf.
