Ingredients

  • 1 9-inch pie crust
  • 1.5 cups pecan halves
  • ¾ cup light corn syrup
  • ½ cup brown sugar
  • 3 tbsp butter
  • 3 large eggs
  • 1 tsp vanilla extract
  • ¼ tsp salt

    Preheat oven to 350°F (175°C). Place the 1 pie crust in a 9-inch pie pan and crimp edges as desired.

    In a medium saucepan over medium heat, combine 0.75 cup corn syrup, 0.5 cup brown sugar, and 3 tbsp butter. Stir until butter melts and sugar dissolves, about 3-4 minutes. Remove from heat and let cool slightly.

    In a large bowl, whisk 3 eggs with 1 tsp vanilla and 0.25 tsp salt until frothy.

    Slowly pour the warm syrup mixture into the eggs, whisking constantly to prevent curdling.

    Arrange 1.5 cups pecan halves evenly over the bottom of the pie crust.

    Pour the filling over the pecans, ensuring they are mostly covered.

    Bake until the filling is set around the edges but slightly jiggly in the center, about 45-50 minutes. Cool completely on a wire rack before slicing.
