Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ¾ cup granulated sugar
- 2 large eggs
- ½ cup vegetable oil
- 2 ripe pears
Instructions
- 1
Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
- 2
In a large bowl, whisk together the 2 cups flour, 2 tsp baking powder, 1/2 tsp salt, 1 tsp cinnamon, and 3/4 cup sugar.
- 3
In another bowl, beat the 2 eggs and 1/2 cup oil until combined. Peel and dice the 2 pears into 1/2-inch chunks.
- 4
Pour the wet ingredients into the dry, add the diced pears, and stir just until no dry flour remains—batter will be thick and lumpy.
- 5
Scrape batter into the prepared pan and smooth the top. Bake until a toothpick inserted in the center comes out clean, about 50-55 minutes.
- 6
Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
