Ingredients

  • 4 slices bacon
  • 1 can (15 oz) white beans
  • 1 large pear
  • ½ small red onion
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar

  1. 1

Cook the 4 slices bacon in a skillet over medium heat until crispy, about 6-8 minutes. Transfer to paper towels, then crumble when cool.

  2. 2

Rinse and drain the 1 can white beans. Thinly slice the 0.5 small red onion. Core and slice the 1 large pear into thin wedges.

  3. 3

In a large bowl, whisk the 2 tbsp olive oil and 1 tbsp apple cider vinegar with a pinch of salt and pepper.

  4. 4

Add the beans, pear, onion, and most of the bacon to the dressing. Toss gently to coat.

  5. 5
