Ingredients

  • 1 head romaine lettuce, chopped
  • 2 cups cooked chicken breast, diced
  • 6 slices bacon, cooked and crumbled
  • 4 count hard-boiled eggs, chopped
  • 1 count avocado, diced
  • ½ cup blue cheese, crumbled
  • 1 batch red wine vinaigrette (3 tbsp red wine vinegar, 0.25 cup olive oil, 1 tbsp Dijon mustard, salt and pepper)

Instructions

    Chop romaine into bite-sized pieces and divide between plates or a serving bowl.

    Arrange chicken, bacon, eggs, avocado, and blue cheese in rows on top of lettuce.

    Whisk red wine vinegar, Dijon mustard, salt, and pepper in a small bowl.

    Slowly whisk in olive oil until the dressing emulsifies and looks creamy.

    Drizzle dressing over the salad and toss gently to combine. Serve immediately.
