Ingredients

  • 1 small green papaya
  • ½ pound shrimp
  • 2 whole lime
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 1 whole red chili
  • ½ cup fresh herbs (mint, cilantro)
  • ¼ cup shredded coconut

Instructions

    Peel and devein shrimp. Boil in salted water until pink, about 2-3 minutes. Drain and chill.

    Peel green papaya, remove seeds, and shred into thin strips using a mandoline or grater.

    In a small bowl, whisk lime juice, fish sauce, and sugar until dissolved. Add sliced chili.

    Toss papaya with dressing and let sit for 5 minutes to soften.

    Add shrimp and fresh herbs to the papaya mixture. Toss gently to combine.

    Toast shredded coconut in a dry pan over medium heat until golden, about 2 minutes.
