Ingredients

  • 4 whole papad (Indian lentil wafers)
  • ¾ cup plain yogurt
  • 3 tbsp tamarind chutney
  • ½ cup cucumber, finely diced
  • ½ cup tomato, finely diced
  • ¼ cup red onion, finely diced
  • 3 tbsp fresh cilantro, chopped
  • ½ tsp cumin powder
  • 1 pinch salt and black pepper to taste

Instructions

    Fry papad in hot oil until puffed and golden, 15–30 seconds per side. Drain on paper towels.

    Dice cucumber, tomato, and red onion into 1/4-inch pieces. Chop cilantro. Set aside.

    Spread 2–3 tbsp yogurt evenly over each papad, leaving a slight border.

    Drizzle 2 tsp tamarind chutney in a zigzag over the yogurt on each papad.

    Scatter cucumber, tomato, and red onion evenly over all four papads.

    Sprinkle cumin powder, cilantro, salt, and black pepper over the top.

    Serve immediately, while papad is still crispy.
