- 1.5 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1.25 cups milk
- 1 large egg
- 3 tablespoons butter
- 8 slices bacon
- ½ cup maple syrup

In a large bowl, whisk together the 1.5 cups flour, 2 tsp baking powder, and 0.5 tsp salt. In another bowl, beat the 1 egg with 1.25 cups milk and 2 tbsp melted butter.

Pour the wet ingredients into the dry and stir until just combined; the batter should be lumpy. Do not overmix.

Cook the 8 bacon slices in a large skillet over medium heat until crispy, about 8 minutes. Transfer to a paper towel-lined plate and pour off most of the fat, leaving a thin coating.

Return the skillet to medium heat. Pour 1/4 cup of batter per pancake and cook until bubbles form on the surface, about 2 minutes. Flip and cook until golden brown, another 1-2 minutes.

Repeat with the remaining batter, adding the remaining 1 tbsp butter to the skillet as needed. Keep pancakes warm.
