Ingredients
- 1.5 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1.25 cups milk
- 1 large egg
- 3 tablespoons butter
- 4 slices bacon
- 2 medium kiwi

In a large bowl, whisk together the 1.5 cups flour, 2 tsp baking powder, and 0.5 tsp salt. In another bowl, beat the 1 egg with 1.25 cups milk and 2 tbsp melted butter until combined.

Pour the wet ingredients into the dry and stir until just combined – a few lumps are fine. Let the batter rest while you cook the bacon.

Cook the 4 bacon slices in a skillet over medium heat until crispy, about 6-8 minutes, turning once. Transfer to a paper towel-lined plate and pour off most of the fat, leaving a thin coating.

Return the skillet to medium heat. Pour 1/4 cup of batter per pancake, cooking 2-3 at a time. Cook until bubbles form on the surface and edges look set, about 2-3 minutes, then flip and cook until golden, another 1-2 minutes.

Peel and slice the 2 kiwis into rounds. Serve the pancakes stacked with bacon and kiwi on top, and add the remaining 1 tbsp butter as a pat on top if desired.
