Ingredients
- 1.5 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup milk
- 1 large egg
- 3 tablespoons butter
- 8 slices bacon

In a large bowl, whisk together the 1.5 cups flour, 2 tsp baking powder, and 0.5 tsp salt. Make a well in the center.

In a separate bowl, beat the 1 egg, then stir in the 1 cup milk and 2 tbsp melted butter. Pour into the flour mixture and stir until just combined; lumps are okay.

Heat a griddle or large skillet over medium heat. Cook the 8 bacon slices until crispy, about 8 minutes, turning once. Drain on paper towels and keep warm.

Pour 1/4 cup of batter per pancake onto the hot griddle. Cook until bubbles form on the surface and edges look set, about 2 minutes.

Flip and cook until golden brown on the other side, about 1-2 minutes. Repeat with remaining batter, adding more butter to the pan if needed.

Serve the pancakes topped with the crispy bacon and a pat of the remaining 1 tbsp butter.
