Ingredients

  • 1.5 lb pork ribs (baby back or short ribs)
  • 2 medium bell peppers (red or yellow), cut into thick strips
  • 4 cloves garlic, minced
  • 1 whole lime
  • 1 tsp smoked paprika
  • 2 whole bay leaves

Instructions

  1. 1

Pat the ribs dry and season generously with salt, pepper, and smoked paprika on both sides.

  2. 2

Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 90 seconds.

  3. 3

Sear ribs 2 minutes per side without moving until edges brown and caramelize. Work in batches if needed.

  4. 4

Remove ribs and set aside. Add garlic and bay leaves to the pan, cook 30 seconds until fragrant.

  5. 5

Add pepper strips, toss with garlic and oil, cook 4 minutes until soft and lightly charred.

  6. 6

Return ribs to the skillet, squeeze lime juice over everything, toss once. Serve immediately.
