Pan-Seared Lobster Tails

Ingredients
- 4 whole lobster tails
- 4 tablespoons butter
- 3 cloves garlic
- 2 tablespoons fresh parsley
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 whole lemon

Using kitchen shears, cut the top shell of each lobster tail lengthwise and gently pull the meat up and over the shell, leaving it attached at the base. Pat dry with paper towels.

Season the lobster meat with the 1/2 tsp salt and 1/4 tsp black pepper. Mince the 3 garlic cloves and chop the 2 tbsp parsley.

Heat a large skillet over medium-high heat and add the 4 tbsp butter. Once melted and foaming, add the minced garlic and cook until fragrant, about 30 seconds.

Place the lobster tails in the skillet, meat-side down. Sear until golden brown, about 2-3 minutes. Flip and cook until the meat is opaque and just cooked through, about 3-4 more minutes.

Remove the tails from the skillet and spoon the garlic butter over them. Squeeze the juice of 1 lemon over the top and sprinkle with the chopped parsley. Serve immediately.

Optional: add a pinch of paprika or cayenne with the garlic for a spicy kick.
