Ingredients
- 12 count oysters, in shell
- 2 cups fresh spinach, packed
- 4 tbsp butter
- 3 cloves garlic, minced
- ½ cup breadcrumbs, panko
- 2 tbsp fresh parsley, chopped
- 1 whole lemon
- 1 to taste salt and black pepper
- ⅛ tsp cayenne pepper

Shuck oysters and loosen from shell, leaving liquid inside. Arrange on a baking sheet.

Melt butter in a large skillet over medium. Add garlic and cook until fragrant, about 60 seconds.

Add spinach and cook, stirring, until wilted, about 90 seconds. Season with salt and pepper.

Remove from heat. Stir in parsley and cayenne. Let cool 2 minutes, then divide among oyster shells.

Sprinkle breadcrumbs over each oyster. Broil 4 inches from heat until golden, about 4 minutes.
