Ingredients

  • 1.5 lbs pre-cooked oxtail (or beef chuck, shredded)
  • 1 cup beef broth or stock
  • 1.5 cups white rice
  • ½ medium onion, diced
  • ¾ cup fresh salsa (tomato-based)
  • 2 tbsp butter
  • ½ tsp hot sauce (optional, cayenne or habanero)

Instructions

  1. 1

Bring broth to a boil in a large skillet. Add rice and stir, then cover and reduce heat to low.

  2. 2

While rice cooks, melt butter in a small pot over medium heat. Add diced onion and cook until soft, ~4 minutes.

  3. 3

Add pre-cooked oxtail and salsa to the onion. Stir in hot sauce if using. Simmer 5 minutes until warmed through.

  4. 4

Check rice — grains should be tender and liquid mostly absorbed, about 15–18 minutes total.

  5. 5

Fluff rice with a fork. Divide between bowls or plates.

  6. 6

Spoon oxtail and salsa gravy over rice. Serve hot.
