Ingredients
- 1.5 lbs pre-cooked oxtail (or beef chuck, shredded)
- 1 cup beef broth or stock
- 1.5 cups white rice
- ½ medium onion, diced
- ¾ cup fresh salsa (tomato-based)
- 2 tbsp butter
- ½ tsp hot sauce (optional, cayenne or habanero)

Bring broth to a boil in a large skillet. Add rice and stir, then cover and reduce heat to low.

While rice cooks, melt butter in a small pot over medium heat. Add diced onion and cook until soft, ~4 minutes.

Add pre-cooked oxtail and salsa to the onion. Stir in hot sauce if using. Simmer 5 minutes until warmed through.

Check rice — grains should be tender and liquid mostly absorbed, about 15–18 minutes total.
