Ingredients

  • 1.5 cups all-purpose flour
  • 1 cup sugar
  • 3 large eggs
  • ¾ cup olive oil
  • ½ cup milk
  • 1 whole lemon
  • 1.5 teaspoons baking powder
  • ½ teaspoon salt

    Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan with olive oil and line the bottom with parchment paper.

    In a large bowl, whisk together the 1.5 cups flour, 1.5 tsp baking powder, and 0.5 tsp salt.

    In another bowl, beat the 3 eggs and 1 cup sugar with an electric mixer until pale and thick, about 3 minutes.

    Gradually beat in the 0.75 cup olive oil and 0.5 cup milk. Add the zest of 1 lemon and 2 tbsp lemon juice, mixing until combined.

    Fold the dry ingredients into the wet mixture until just combined—do not overmix; the batter will be slightly lumpy.

    Pour the batter into the prepared pan and smooth the top. Bake until golden and a toothpick inserted in the center comes out clean, about 35-40 minutes.

    Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Serve with lemon slices if desired.
