Ingredients
- 1.5 cups all-purpose flour
- 1 cup sugar
- 3 large eggs
- ¾ cup olive oil
- ½ cup milk
- 1 whole lemon
- 1.5 teaspoons baking powder
- ½ teaspoon salt

In another bowl, beat the 3 eggs and 1 cup sugar with an electric mixer until pale and thick, about 3 minutes.

Gradually beat in the 0.75 cup olive oil and 0.5 cup milk. Add the zest of 1 lemon and 2 tbsp lemon juice, mixing until combined.
