Ingredients
- ½ cup ground ogbono
- ¼ cup palm oil
- 4 cups beef broth
- ½ pound beef
- 2 cups leafy greens (e.g., spinach or collard greens)
- 1 medium onion
- 1 teaspoon salt
- 2 cups fufu (prepared)

In a pot, heat the 1/4 cup palm oil over medium heat. Add the 1/2 cup ground ogbono and stir continuously until it dissolves and turns slightly darker, about 3 minutes.

Add the 1 sliced onion and 1/2 pound beef (cut into bite-sized pieces) to the pot. Cook, stirring, until the onion is soft and the beef is browned on all sides, about 5 minutes.

Pour in the 4 cups beef broth and bring to a boil. Reduce heat to low and simmer, covered, until the beef is tender, about 20 minutes.

Stir in the 2 cups leafy greens and 1 teaspoon salt. Cook until the greens are wilted and the soup is thickened, about 5 minutes. Adjust salt to taste.

Serve the ogbono soup hot with the 2 cups fufu on the side. Use your fingers to pinch off pieces of fufu and dip into the soup.
