Ingredients

  • 8 oz soft cheese (such as Camembert or Brie), rind removed
  • 3 tablespoons butter, softened to room temperature
  • ¼ whole white onion
  • 1 teaspoon caraway seeds
  • ½ teaspoon sweet paprika
  • 0 salt and pepper to taste

    Cut the onion lengthwise from root to tip into thin slices, then chop crosswise into pieces smaller than a grain of rice — roughly the size of a pinhead — so they dissolve into the cheese.

    Place the softened cheese and softened butter into a medium bowl.

    Mash the cheese and butter together using the back of a fork, pressing down hard and stirring in circles, until no lumps remain and the mixture looks smooth and creamy.

    Add the finely minced onion, caraway seeds, and sweet paprika to the cheese mixture.

    Stir everything together using the fork until the onion and spices are evenly distributed throughout, about 30 seconds.

    Taste a small spoonful, then sprinkle salt and pepper over the surface and stir until you can taste the seasoning; add more if needed.

    Transfer the obatzda to a small serving bowl and bring to the table alongside sliced pretzels, thinly sliced radishes, and dark bread for spreading.
