Oats Dhokla

Ingredients
- 1 cup rolled oats
- ½ cup plain yogurt
- 1 small, finely chopped green chili
- 1 teaspoon mustard seeds
- ¼ teaspoon baking soda
- 2 tablespoons, chopped cilantro

In a blender, grind the 1 cup rolled oats into a fine powder. Transfer to a bowl and mix in the 0.5 cup yogurt and 0.25 cup water to make a thick batter. Let it rest for 5 minutes.

Stir in the 1 finely chopped green chili, 0.25 teaspoon baking soda, and 0.5 teaspoon salt. The batter should be thick but pourable; add a splash of water if needed.

Pour the batter into a greased microwave-safe dish (about 8 inch round). Microwave on high for 4-5 minutes, until a toothpick inserted in the center comes out clean.

In a small pan, heat 1 tablespoon oil over medium heat. Add the 1 teaspoon mustard seeds and let them splutter for 30 seconds. Pour this tempering over the steamed dhokla.

Garnish with the 2 tablespoons chopped cilantro. Cut into squares and serve warm with chutney or ketchup.
