Ingredients

  • 1 cup Graham cracker crumbs
  • 4 tbsp Butter, melted
  • 1 lb Quark cheese (or Greek yogurt)
  • ⅓ cup Granulated sugar
  • 1 whole Lemon (zested + juiced)
  • ½ cup Heavy cream, cold
  • 1 cup Strawberries, halved
  • ¾ cup Blueberries

Instructions

    Mix graham crumbs with melted butter until the texture resembles damp sand, then press firmly into the bottom of an 8-inch square pan.

    Whisk quark, sugar, and lemon zest + juice together in a bowl until smooth and creamy.

    In a separate bowl, whip cold heavy cream to soft peaks, then fold gently into the quark mixture until no streaks remain.

    Spread the filling evenly over the crust, smooth the top with a spatula, then refrigerate while you prep the berries.
