Ingredients

  • 8 shells frozen choux pastry shells (store-bought)
  • 1 cup heavy cream, cold
  • 2 tbsp powdered sugar
  • 4 oz dark chocolate, chopped
  • 2 tbsp butter
  • ½ cup hazelnuts, roughly chopped
  • 1 oz milk chocolate bar, shaved (for garnish)

Instructions

    Thaw choux shells at room temperature for 10 minutes while you whip the cream.

    Pour cold cream into a bowl. Whip with a hand mixer or whisk until soft peaks form, ~2 minutes.

    Fold powdered sugar into whipped cream until combined. Gently spoon into a piping bag.

    Pipe cream filling into the thawed choux shells from the bottom seam until plump.

    Melt dark chocolate with butter in a microwave (30-second bursts, stirring between) until smooth.

    Dip top of each filled eclair into warm chocolate glaze, then sprinkle with chopped hazelnuts and milk chocolate shavings.
