Ingredients
- 2 cups jasmine rice
- 1 lb chicken thighs
- 1 can (13.5 oz) coconut milk
- 1 medium onion
- 3 cloves garlic
- 1 large carrot
- 1 cup green beans
- 1 medium tomato

Rinse the 2 cups jasmine rice under cold water until the water runs clear. Drain and set aside.

In a large pot, heat 1 tbsp oil over medium heat. Add the 1 sliced onion and 3 minced garlic cloves, cook until soft and fragrant, about 3 minutes.

Add the 1 lb chicken thighs (cut into chunks) and cook until browned on all sides, about 5 minutes.

Stir in the 2 cups rice, 1 can coconut milk, and 1.5 cups water. Season with 1 tsp salt and 1/2 tsp black pepper. Bring to a simmer.

Reduce heat to low, cover, and cook for 20 minutes, or until the rice is tender and liquid is absorbed.

While rice cooks, slice the 1 carrot and 1 cup green beans. Add them to the pot during the last 10 minutes of cooking, stirring gently.
