Ingredients

  • 2 cups Cooked rice, cooled
  • 3 medium Shallots, thinly sliced
  • 2 cloves Garlic, minced
  • 150 g Chicken thigh, diced small
  • 100 g Shrimp, peeled and halved
  • 2 whole Eggs
  • 2 tbsp Soy sauce
  • 1 medium Red chili, minced (optional)

Instructions

    Heat 3 tbsp oil in a skillet over medium-high heat.

    Add sliced shallots, cook until golden and crispy.

    Transfer crispy shallots to a paper towel to drain.

    In the same skillet, add minced garlic, stir for 10 seconds.

    Add diced chicken, cook until cooked through, about 4 minutes.

    Add halved shrimp, stir until they turn pink, about 90 seconds.

    Push proteins to the side of the skillet.

    Add cooled rice, breaking up clumps with the back of spoon.

    Stir rice and proteins together until evenly combined.

    Pour soy sauce over rice, toss until rice is coated.

    Divide rice mixture into small piles on two plates.

    Fry two eggs sunny-side up in a separate small skillet.

    Top each rice pile with a fried egg.

    Scatter crispy shallots and minced chili over each portion.

    Serve immediately while egg is still warm.
