Ingredients

  • 2 cups cooked white rice
  • 1 tsp ground turmeric
  • ½ cup coconut milk
  • ½ lb squid, cleaned and cut into rings
  • 1 whole cucumber
  • 1 whole tomato
  • ¼ cup fried shallots
  • 1 whole lime

Instructions

    Heat 2 tbsp oil in a large skillet over medium-high heat for 90 seconds until shimmering.

    Add turmeric and stir 15 seconds until fragrant, then add rice, breaking up clumps.

    Pour in coconut milk, stir to coat evenly, then heat through for 2 minutes until warmed.

    Transfer rice to a plate. Pat squid dry and season with salt and pepper.

    Add squid to the same skillet and sear 90 seconds per side without stirring until edges curl.

    Slice cucumber and tomato, arrange on the plate alongside rice and squid.
