Ingredients
- 2 tbsp olive oil
- 1 medium, chopped onion
- 1 lb, sliced mushrooms
- 4 cups vegetable broth
- ½ cup heavy cream
- 1 cup croutons
- ¼ cup, chopped cilantro
- 1 medium, cut into wedges lemon

Heat the 2 tbsp olive oil in a large pot over medium heat. Add the 1 chopped onion and cook until soft and translucent, about 5 minutes.

Add the 1 lb sliced mushrooms and cook, stirring occasionally, until they release their liquid and start to brown, about 8-10 minutes.

Pour in the 4 cups vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes to blend flavors.

Using an immersion blender, puree the soup until smooth. Alternatively, carefully transfer to a blender in batches and blend until smooth.

Stir in the 0.5 cup heavy cream and heat through for 2 minutes. Season with salt and pepper to taste.
