- 4 cups water
- 1 teaspoon salt
- 2 tablespoons olive oil
- 8 ounces mushrooms
- 4 slices bacon
- 1 tablespoon fresh thyme

In a large pot, bring 4 cups water and 1 tsp salt to a boil. Slowly whisk in 1 cup polenta, reduce heat to low, and cook, stirring often, until thick and creamy, about 20-25 minutes.

While polenta cooks, cook 4 slices bacon in a skillet over medium heat until crispy, about 6-8 minutes. Remove bacon, crumble, and set aside, leaving about 1 tbsp drippings in the pan.

Add 2 tbsp olive oil to the same skillet and heat over medium-high. Add 8 oz sliced mushrooms and cook, stirring occasionally, until golden and browned, about 8-10 minutes.
