Ingredients

  • 4 whole biscuits
  • 8 oz mushrooms
  • 2 tbsp butter
  • 2 tbsp flour
  • 1.5 cup milk
  • 4 whole eggs
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

    Warm the 4 biscuits in the oven at 350°F for 5-10 minutes, or until heated through.

    Melt 2 tbsp butter in a skillet over medium heat. Add 8 oz sliced mushrooms and cook until browned and tender, about 8 minutes.

    Sprinkle 2 tbsp flour over the mushrooms and stir for 1 minute until the flour is absorbed.

    Gradually whisk in 1.5 cups milk, stirring constantly. Bring to a simmer and cook until thickened, about 5 minutes. Season with 0.5 tsp salt and 0.25 tsp pepper.

    Poach 4 eggs in simmering water for 3-4 minutes until whites are set but yolks are runny.

    Split the biscuits and place on plates. Spoon the gravy over, then top each with a poached egg.
