Ingredients
- 1 pound frozen french fries
- 8 ounces mushrooms
- 1 medium onion
- 2 stalks green onions
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- ½ teaspoon salt
- ¼ teaspoon black pepper

Preheat oven to 425°F. Spread the 1 lb frozen fries on a baking sheet in a single layer. Bake until golden and crispy, about 25 minutes, shaking halfway.

While fries bake, slice the 8 oz mushrooms and 1 medium onion into thin strips. Chop the 2 green onions for garnish.

Heat 2 tbsp vegetable oil in a large skillet over medium-high. Add mushrooms and onion, season with 1/2 tsp salt and 1/4 tsp black pepper. Cook until mushrooms release liquid and brown, about 8 minutes.

Stir in 2 tbsp soy sauce and cook 1 minute until absorbed. The mixture should look glossy and smell savory.
