Ingredients

  • 1 pound frozen french fries
  • 8 ounces mushrooms
  • 1 medium onion
  • 2 stalks green onions
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. 1

Preheat oven to 425°F. Spread the 1 lb frozen fries on a baking sheet in a single layer. Bake until golden and crispy, about 25 minutes, shaking halfway.

  2. 2

While fries bake, slice the 8 oz mushrooms and 1 medium onion into thin strips. Chop the 2 green onions for garnish.

  3. 3

Heat 2 tbsp vegetable oil in a large skillet over medium-high. Add mushrooms and onion, season with 1/2 tsp salt and 1/4 tsp black pepper. Cook until mushrooms release liquid and brown, about 8 minutes.

  4. 4

Stir in 2 tbsp soy sauce and cook 1 minute until absorbed. The mixture should look glossy and smell savory.

  5. 5

When fries are done, transfer to a serving platter. Spoon the mushroom-onion mixture over the top.

  6. 6

Sprinkle with chopped green onions and drizzle any pan juices from the skillet over everything. Serve hot.
