Ingredients

- 1 medium, chopped onion
- 2 cloves, minced garlic
- 1 tsp ground cumin
- 1 can (14.5 oz) diced tomatoes
- 1 cup, rinsed brown lentils

Heat 2 tbsp olive oil in a pot over medium. Add 1 chopped onion and cook until soft, about 5 minutes.

Stir in 2 minced garlic cloves and 1 tsp ground cumin; cook until fragrant, about 1 minute.

Add 1 can diced tomatoes (with juices) and 1 cup rinsed lentils. Pour in 4 cups water; bring to a boil.

Reduce heat to low, cover, and simmer until lentils are tender, about 15-20 minutes. Season with salt and pepper.
