Ingredients
- 1 cup dried lentils
- 1 medium carrot
- 1 medium potato
- 4 cups vegetable broth
- 2 tbsp olive oil
- ¼ cup fresh parsley

Rinse the 1 cup lentils and chop the 1 carrot and 1 potato into small cubes.

In a pot, heat the 2 tbsp olive oil over medium. Add the carrot and potato, cook until slightly softened, about 5 minutes.

Add the lentils and 4 cups vegetable broth. Bring to a boil, then reduce heat and simmer until lentils are tender, about 15 minutes.

Stir in the 1/4 cup chopped parsley and season with salt and pepper. Serve hot, garnished with extra parsley if desired.
