Ingredients

- 1 medium onion
- 3 medium carrots
- 1 cup brown lentils
- 4 cups vegetable broth
- 1 tsp ground cumin
- 1 tsp salt
- ½ tsp black pepper

Heat the 2 tbsp olive oil in a large pot over medium heat. Add the 1 diced onion and cook until soft and translucent, about 5 minutes.

Add the 3 sliced carrots and 1 tsp ground cumin. Stir and cook for 2 minutes until the carrots begin to soften and the cumin is fragrant.

Add the 1 cup rinsed brown lentils and 4 cups vegetable broth. Stir to combine, scraping any browned bits from the bottom.

Bring to a boil, then reduce heat to low. Cover and simmer until lentils are tender and carrots are soft, about 30 minutes.
