Ingredients

  • 1 lb pork tenderloin or pork chops
  • 1 cup jarred mole verde sauce
  • ½ cup chicken broth
  • 1 whole lime
  • 6 whole flour tortillas
  • ½ whole white onion, thinly sliced

Instructions

  1. 1

Pat pork dry and season generously with salt and pepper on both sides.

  2. 2

Heat oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

  3. 3

Sear pork 2 minutes per side without moving—it should be golden brown but slightly pink in the center.

  4. 4

Stir in mole verde and broth, then simmer 4–5 minutes until pork is cooked through and sauce coats the back of a spoon.

  5. 5

Squeeze lime juice over the pork, then scatter sliced onion on top and taste for salt.

  6. 6

Warm tortillas in a dry skillet 30 seconds per side, then serve alongside the pork and sauce.
