Ingredients

  • 4 pieces pork chops, boneless (1 inch thick)
  • 1.5 cups jarred mole verde sauce
  • ½ cup chicken or vegetable broth
  • ½ medium white onion, sliced
  • ¼ cup fresh cilantro (chopped)
  • 1 whole lime (juiced)
  • 8 pieces warm corn tortillas

Instructions

    Pat pork chops dry. Season both sides with salt and black pepper.

    Heat oil in a large skillet over medium-high until shimmering. Sear pork 2 minutes per side without moving—edges should look golden.

    Remove pork to a plate. In the same skillet, cook sliced onion 2 minutes until soft.

    Pour in mole verde and broth, stirring to combine. Slide pork back in and simmer 6 minutes until cooked through.

    Squeeze lime juice over top. Scatter cilantro on pork and sauce.
