Ingredients

  • 4 steaks (about 6 oz each) pork shoulder steaks (bone-in or boneless, 1-inch thick)
  • 1 whole orange (zested and juiced)
  • 2 whole lime (juiced)
  • 6 cloves garlic cloves (minced)
  • 1 tsp cumin
  • 3 tbsp olive oil
  • ¼ cup fresh cilantro or parsley (chopped)

Instructions

    Pat pork steaks dry. Season both sides generously with salt, pepper, and cumin.

    Heat oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Sear pork 2 minutes per side without moving. Edges should be golden brown and caramelized.

    Add garlic to the pan. Cook 30 seconds until fragrant, then pour in orange juice and lime juice.

    Simmer 4–5 minutes, spooning the glaze over the pork. Center should feel firm but juicy.
