Ingredients
- 2 lb pork shoulder, boneless (or pork butt), cut into 2-inch chunks
- 1 whole (juiced) orange
- 2 whole (juiced) lime
- 8 cloves, minced garlic
- 1 tsp cumin
- 2 whole bay leaves
- ½ cup chicken broth

Heat 2 tbsp oil in a large skillet over medium-high until shimmering, ~90 seconds.

Working in batches, sear pork chunks 2-3 minutes per side without stirring until deep brown.

Add garlic and cumin, stir for 30 seconds until fragrant, then pour in orange juice, lime juice, and broth.

Drop in bay leaves, reduce heat to medium, cover, and simmer 8 minutes until pork is tender.
