Ingredients

  • 2 lb pork shoulder, boneless (or pork butt), cut into 2-inch chunks
  • 1 whole (juiced) orange
  • 2 whole (juiced) lime
  • 8 cloves, minced garlic
  • 1 tsp cumin
  • 2 whole bay leaves
  • ½ cup chicken broth

Instructions

    Heat 2 tbsp oil in a large skillet over medium-high until shimmering, ~90 seconds.

    Working in batches, sear pork chunks 2-3 minutes per side without stirring until deep brown.

    Add garlic and cumin, stir for 30 seconds until fragrant, then pour in orange juice, lime juice, and broth.

    Drop in bay leaves, reduce heat to medium, cover, and simmer 8 minutes until pork is tender.

    Uncover, increase heat to medium-high, and simmer 2-3 minutes until sauce reduces and coats the meat.

    Season with salt and pepper to taste. Serve hot with white rice and lime wedges on the side.
