Mixed Seafood Ceviche

Ingredients

  • 1 lb shrimp, peeled and deveined
  • ½ cup lime juice
  • 1 medium tomato, diced
  • ½ medium red onion, thinly sliced
  • ½ medium cucumber, diced
  • 1 large avocado, diced
  • ¼ cup fresh cilantro, chopped
  • 2 cups tortilla chips

Instructions

    In a medium bowl, combine 1 lb shrimp and 1/2 cup lime juice. Stir to coat, then refrigerate for 15 minutes until shrimp turn pink and opaque.

    While shrimp marinate, dice 1 tomato, 1/2 cucumber, and 1/2 red onion. Set aside.

    After 15 minutes, drain the shrimp and chop into bite-sized pieces. Return to the bowl.

    Add the diced tomato, cucumber, and red onion to the shrimp. Stir gently to combine.

    Just before serving, fold in 1 diced avocado and 1/4 cup chopped cilantro. Season with salt and pepper to taste.
