Ingredients

  • 12 oz mixed pasta shapes
  • 24 oz canned crushed tomatoes
  • 3 cloves garlic
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ cup fresh basil

    Bring a large pot of salted water to a boil. Add the 12 oz mixed pasta and cook according to package directions until al dente, about 10-12 minutes. Reserve 1 cup of pasta water before draining.

    While the pasta cooks, heat the 2 tbsp olive oil in a large skillet over medium heat. Add the 3 minced garlic cloves and cook until fragrant, about 1 minute, stirring constantly.

    Pour in the 24 oz crushed tomatoes, 1 tsp dried oregano, 1 tsp salt, and 0.5 tsp black pepper. Stir to combine and bring to a simmer.

    Let the sauce simmer gently for 10 minutes, stirring occasionally, until it thickens slightly and the flavors meld. It should look rich and smell aromatic.

    Add the drained pasta to the skillet with the sauce. Toss to coat, adding a splash of the reserved pasta water if the sauce seems too thick.

    Remove from heat and stir in the 0.25 cup chopped fresh basil. Serve hot, with extra black pepper if desired.
