Ingredients

  • ½ lb chicken breast, boneless and skinless
  • ½ lb ground beef
  • ¾ cup Greek yogurt
  • ½ medium cucumber, fresh
  • 4 pieces pita bread
  • 1 whole lemon

Instructions

    Place the chicken breast on a cutting board and slice it crosswise into 1/2-inch-thick strips, like cutting bread, so the pieces are easy to cook through quickly.

    Peel the cucumber lengthwise with a vegetable peeler to remove the skin, then cut the peeled cucumber in half lengthwise and scoop out the seeds with a spoon.

    Slice each cucumber half crosswise into 1/4-inch-thick half-moons and place them in a small bowl.

    Cut the lemon in half and juice one half into the bowl with the cucumber using a citrus juicer or your hand, squeezing out all the liquid.

    Stir the cucumber and lemon juice together with a pinch of salt and pepper, then set the bowl aside.

    Place a 12-inch skillet over medium-high heat and wait 90 seconds until a drop of water sizzles and evaporates immediately.

    Pour 1 tablespoon of olive oil into the hot skillet, tilting to coat the bottom evenly.

    Add the chicken strips and cook without stirring for 3 minutes until the bottoms turn golden brown and pull away easily from the pan.

    Stir the chicken and cook for another 2 minutes until no pink remains inside when you cut a thick piece in half.

    Push the cooked chicken to the side of the skillet and add the ground beef to the empty space.

    Break the beef into small crumbles using a wooden spoon and cook, stirring often, for 4 minutes until no pink remains and the meat is cooked through.

    Add 1 teaspoon of oregano and 1/2 teaspoon of garlic powder to the skillet, stir everything together, and cook for 30 seconds until the spices smell fragrant.

    Wrap each pita bread in damp paper towels and microwave on high for 20 seconds until soft and warm to the touch.

    Place 2 pita breads on each plate and top each pita with a small handful of the cooked chicken and beef mixture.

    Spoon 3 tablespoons of Greek yogurt onto each plate next to the pitas.

    Drain the cucumber mixture briefly over a sink and spoon it onto each plate next to the yogurt.

    Cut the remaining lemon half into 2 wedges and place one on each plate for squeezing over the gyros to taste.
